A hand-me-up recipe from a granddaughter is a success.
We loved this vegetable casserole when we saw it at taste testing. We loved it even more when we read the story accompanying it by senior center volunteer Henrietta Jachlewski of West Seneca, N.Y. Seems she got the recipe “handed up” from her granddaughter, who is vegetarian. Henrietta loves it and says it’s a hit at parties. We agree. With its hip combination of orzo, peppers, feta and pine nuts, it’s just what we’d like to find at our next “covered dish” or potluck supper. We look forward to our next hand-me-up, as does Henrietta.
Great for potlucks, this simple dish is perfect as a vegetarian entrée or as a side.
