Zucchini, Green Onion and Gruyère Pizza

Zucchini Green Onion and Gruyere Flatbread

1 thin pizza crust or wrap (like Flatout Artisan Thin Pizza Crust)
1/4teaspoon olive oil
1 medium zucchini
3/4cup shredded Gruyère or Swiss cheese
1 chopped green onion
2 thyme sprigs


  1. Preheat the oven to 425F and coat a baking sheet with nonstick spray. Put crust or wrap on the pan and brush with olive oil. Bake 4 minutes. Remove from oven and flip.
  2. Slice a zucchini lengthwise into 1/8-inch-thick slabs. Cut lengths to match width of crust. Top crust with 1/2 cup cheese, zucchini slices and green onion. Top with additional 1/4 cup cheese and leaves from 2 thyme sprigs. Bake about 6 minutes, until crust is crispy and cheese has melted. Serves 2.
