Zippy Egg Salad

"When I ran across this recipe for egg salad for two, it suited our lifestyle. Serve it on bread or crackers."


3 hard-cooked eggs
3tablespoons mayonnaise
1tablespoon prepared mustard
1/8teaspoon salt
1/8teaspoon pepper
1/8tablespoon lemon juice
1tablespoon minced green onion


  1. In a small bowl, combine mayonnaise, mustard, salt, pepper, and lemon juice.
  2. Stir in eggs with a fork, chopping them into bite-sized pieces.
  3. Add green onion.
