Zatarain's Mardi Gras Creole Eggs

1box Zatarain's Creole Rice
7medium hard boiled eggs
1cup shredded American cheese
1cup cracker crumbs
4tablespoons melted butter


  1. Boil 6 or 7 medium eggs to hard boiled status
  2. Cook Zatarain’s Creole Rice according to package
  3. In a greased 8×8 casserole dish, layer rice mixture and sliced eggs.  Top with cheese and crumbs – drizzle melted butter over crumbs.
  4. Bake at 350 for 15-20 minutes.
