Wild Rice Cassarole

1cup wild rice


1 C wild rice

1/2 C olive oil

2 C plum tomatoes including juice

1 C California Ripe Black Olives, whole

1 C white mushrooms, quartered

1/2 C onions chopped

1 C grated chedder cheese

salt and pepper to taste

This recipe is a super easy, healthy, hearty, comfort cassrole. Delicious smells fill the room while it's baking. Great for a night when your cutting back on meat but still want to feel satisfied.

Mix all the ingredients together, except chedder cheese, in a covered baking dish. Bake for 1-1/2 hours or until rice in tender. Mix in chedder cheese, return to oven for another 10 minutes to melt the cheese into the cassarole. Remove from oven and enjoy!
