Walnut Pound Cake with Brown Sugar Frosting

Walnut Pound Cake:
1cup (2 sticks) butter, softened
1/2cup shortening
2cups packed light brown sugar
1cup sugar
5 eggs
3cups flour
1/2teaspoon baking powder
1cup milk
1teaspoon vanilla extract
1cup chopped English walnuts
Brown Sugar Frosting
English walnuts, to taste
Brown Sugar Frosting:
1/2cup (1 stick) butter
1cup packed light brown sugar
1/3cup half-and-half
1 1/4cups confectioners' sugar
1teaspoon vanilla extract


  1. To prepare the cake.  Cream the butter and shortening in a mixer bowl.  Beat in the brown sugar and sugar until light and fluffy.  Beat in the eggs 1 at a time.  Add a mixture of the flour and baking powder and beat well.  Mix in the milk and vanilla.  Fold in 1 cup English walnuts.  Spoon into a tube pan.  Bake at 350F for 60 to 70 minutes or until cake tests done.  Invert onto a wire rack to cool.  Remove to a serving plate.  Frost with the Brown Sugar Frosting.  Sprinkle with English walnuts to taste.
  2. To prepare the frosting.  Melt the butter in a saucepan over medium-high heat.  Stir in the brown sugar.  Bring to a boil.  Boil for 2 minutes.  Let stand until cooled slightly.  Add the half-and-half and mix well.  Return to a boil.  Cool to room temperature.  Beat in the confectioners’ sugar and vanilla.
