Tuscan Potato Salad


6medium potatoes
2tablespoons olive oil
1large clove garlic (or 2 small cloves), very finely chopped
2tablespoons finely chopped fresh parsley
2tablespoons finely chopped fresh chives
1/4teaspoon salt
1/4teaspoon freshly ground black pepper


  1. Boil and peel potatoes, then cut into thick slices.
  2. Combine all ingredients and toss lightly.
  3. Allow to stand about 1/2 hour to blend flavors before serving at room temperature.
