Tuscan Potato Salad
- 6medium potatoes
- 2tablespoons olive oil
- 1large clove garlic (or 2 small cloves), very finely chopped
- 2tablespoons finely chopped fresh parsley
- 2tablespoons finely chopped fresh chives
- 1/4teaspoon salt
- 1/4teaspoon freshly ground black pepper
- Boil and peel potatoes, then cut into thick slices.
- Combine all ingredients and toss lightly.
- Allow to stand about 1/2 hour to blend flavors before serving at room temperature.
