Tomato & Dill Soup


2 onions, minced
2 cloves garlic, chopped
1teaspoon olive oil
4cups chopped plum tomatoes
1cup diced sweet red peppers
1/4cup diced celery
2tablespoons chopped green chillies
2cups stock
2teaspoons fresh dill, chopped
2tablespoons chopped fresh cilantro
1/2teaspoon cayenne
1/4teaspoon cumin


  1. Combine all ingredients except dill, cilantro, cumin, cayenne & salt. Bring to a boil & simmer for 25 minutes. Let cool slightly, then puree. Stir in remaining ingredients with some salt & pepper. Serve warmed or chilled.
