Tea Smoked Chicken with Sesame Vegetable Relish

4pieces boneless, skinless chicken breast halves
1/4cup raw rice
1/4cup molasses
1/4cup brown sugar
1/4cup black tea leaves
1piece cinnamon stick
1tablespoon whole allspice
-- sesame seeds
vegetable relish
2cups sesame oil
2tablespoons seasoned rice wine vinegar
2cloves crushed garlic
2tablespoons soy sauce
1/2teaspoon crushed red pepper
1/2teaspoon grated orange peel
4tablespoons finely diced water chestnuts,
4tablespoons finely diced red bell pepper,
4tablespoons finely diced carrot
4tablespoons finely diced celery
2tablespoons chopped cilantro
2small green onions minced


Line wok or stockpot with foil. On top of foil, place rice, molasses, brown sugar, tea leaves, cinnamon stick and allspice; stir gently. Place small rack over mixture and arrange chicken breasts on rack. Cover and cook over medium heat for 10 minutes. Remove from heat and let stand 10 minutes; slice chicken. Place Sesame Vegetable Relish on serving dish and arrange chicken on top Garnish with sesame seeds. Makes 4 servings.<BR><BR>Sesame Vegetable Relish: In medium bowl, mix together 2 tablespoons sesame oil, 2 tablespoons seasoned rice wine vinegar, 2 cloves crushed garlic, 2 teaspoons soy sauce, 1/2 teaspoon crushed red pepper, 1/2 teaspoon grated orange peel, 4 tablespoons finely diced water chestnuts, 4 tablespoons finely diced red bell pepper, 4 tablespoons finely diced carrot, 4 tablespoons finely diced celery, 2 tablespoons chopped cilantro and 2 small green onions, minced.
