Sweet and Sour Cabbage

1tablespoon canola oil
1large head green cabbage, core removed and head shredded (about 6 cups)
1large onion, halved and sliced thinly
1/4cup sugar
1 (6-ounce) can tomato paste
2 bay leaves
6sprigs fresh thyme
2cups tomato juice or water
Juice of 1 lemon
Freshly ground black pepper, to taste


  1. Heat oil in a nonreactive large saucepan over high heat. Add cabbage and onions and saute 4 minutes until lightly browned. Add sugar and continue to saute another minute. Add tomato paste and stir well to combine.
  2. Add bay leaves, thyme, tomato juice and lemon juice, reduce heat and simmer 10 to 12 minutes until tender and sauce is reduced and thickened. Season with pepper.
