Sun-Dried Tomato Pesto

Grilled Chicken with Sundried Tomato Pesto

2cloves garlic
1cup oil-packed sun-dried tomatoes, drained
4tablespoons lemon juice
1/2cup grated Parmesan cheese
1/4cup pine nuts
1/4cup extra-virgin olive oil
freshly ground black pepper


Place garlic, sun-dried tomatoes, lemon juice, Parmesan cheese, pine nuts, olive oil and black pepper in the bowl of a food processor. Process until smooth. Fabulous on grilled chicken, steak or pasta.
