Squash Casserole

  • Yield: 6-8 servings


6-8medium Yellow squash cut into 2 " pieces
1medium Onion diced
1-- Bell pepper diced (red will give nice color)
1-- egg beaten in small bowl
12ounces Grated cheddar cheese
3/4cup Bread Crumbs
6tablespoons Melted Butter
1/2teaspoon Salt
1/4teaspoon Pepper


In a large sauce pan or pot steam first three ingredients until tender about 10 minutes. Let cool. Preheat oven to 325 degrees. In a casserole dish add cooled steamed vegetables, salt and pepper, then gently mash leaving some squash chunks.Pour in eggs and melted butter then stir in bread crumbs. Gently mix in 8 ounces of greated cheese. Top with rest of greated cheese.  Cover and bake 20 minutes. Uncover and bake for 10 more minutes.
