I asked my Mom to take the kids yesterday because I had to meet a bunch of deadlines. Several hours later they walked in on me rockin’ out to N’Sync’s “Bye Bye Bye”. Before that, I was dancing to Britney’s, “Hit Me Baby One More Time”.

Those two songs will never go out of style. Right? RIGHT??

Needless to say, the deadlines are still here…

Which brings me to my next point. Every time I send the girls to my mom’s, they come back, like, 5-pounds heavier! What does that lady feed them?! I bet it rhymes with mocholate and mizza.

The girls always come back from her house with rosy cheeks, bloated bellies, and are slap happy, grinning from ear to ear.

One Of My Favorite Salad Recipes For Summer 

So, here’s the thing. I didn’t make mocholate, nor mizza. I made a malad. I mean a salad!
I know. It’s been a hot minute since we last discussed a salad, but honestly? I want to swim… NO. I want to LIVE in summer salads!

However, I do wish I was lettuce… and if I was, I would be something like watercress – the name alone just sounds good to me. And it’s peppery, which is the best word to describe ME! Hot as a pepper! Kidding!!

In my perfect world, we would be swimming in cakes, but gurrrrrrl, Summer has arrived. We need to tone it down, a bit…
Said the girl who JUST had Bacon-Wrapped Tex-Mex Hot Dogs for lunch… Don’t judge. Them things are goooooood!

BUT, what I’m trying to say is that I made a salad. It was bee-YOND! And I ate the whole thing. All of it – 1 whole mango, 2 cups spinach – all in mah belly.

Also?? The honey-lime dressing is SO GOOD!

Ingredients
  

For the Salad
  • 2 cups fresh baby spinach
  • 1 mango , peeled and sliced
  • 1/4- cup cashew halves
For the Dressing
  • 2 tablespoons olive oil
  • 2 limes , juiced
  • 2 tablespoons honey (add more if you like it sweeter)
  • salt and fresh ground pepper , to taste

Instructions
 

  • In a salad bowl, combine spinach, mango slices and cashews; set aside.
  • In a mixing bowl, whisk together olive oil, lime juice, honey, salt and pepper; whisk until thoroughly combined.
  • Pour dressing over salad and gently toss it all together.
  • Serve.

    Too sweet for my taste, will add 1 instead of 2 tablespoons of honey next time. Also I added the dressing components direct to the salad and next time will, as in recipe, pour on to the salad.
