Spinach Dressing

  • Yield: 8 servings


2-- (10-ounce) packages frozen, chopped spinach
1/4cup butter
1-- onion, chopped
3-- green onions, chopped
2stalks celery, chopped
2tablespoons chopped parsley
1/2pound pork or favorite sausage
1pound ground beef
1tablespoon thyme
1tablespoon Beau Monde seasoning (if unable to find, substitute a mixture of onion salt, celery salt and monosodium glutamate)
-- Salt to taste
-- Black and red pepper to taste
2tablespoons Parmesan cheese
2-- eggs
1cup cooked rice


  1. Cook spinach, set aside to drain.  Saute vegetables in butter.  Brown meat.  Add seasonings.  Mix with spinach.  Add cheese, eggs and rice.  Stir together until well mixed.  Bake in a 2-quart casserole for 20 minutes at 350F.
