Roast Beef with Pesto

1-- garlic bulb, separated but unpeeled
1/2cup fresh basil, chopped
dash salt
3pounds beef eye-of-round roast with all fat removed


  1. Preheat oven to 450F.  Fill a medium saucepan half full of water.  Add garlic, and cook on medium-heat for 30 minutes.  Drain and cool.  Peel garlic.  Combine garlic with basil and salt in a food processor or blender, and process until smooth.  Spread mixture over the top and sides of roast, covering completely.  Insert a meat thermometer, and place on a roasting rack that has been coated with non-stick cooking spray.  Cover loosely with foil, and bake for 20 minutes.  Uncover, and roast until desired doneness (approximately 25 minutes for medium).  Remove from oven, and let rest for 15 minutes before slicing thinly across the grain.  Serve with madeira Sauce (next recipe).
