Pumpkin Pie

1.5 cups-- Whole Wheat Flour
9 Tbsps-- Extra Virgin Olive Oil
4.5 Tbsps-- Cold Water
1/4 tsp-- salt
2 pkgs-- firm tofu
1 cup-- honey
14-20ounces pure pumpkin
1 tsp-- real vanilla extract
1.5 tsp-- cinnamom
3/4 tsp-- ginger
1/4 tsp-- cloves
1/4 tsp-- nutmeg


Mix olive oil, flour, water and salt to make pastry dough.  Roll out and place in pie dish.  Crimpt edges to make border.

Blend tofu until extremely smooth.  Add remaining ingredients and blend thoroughly.  Pour into pie shell.   Place pie dish in large paper shopping bag and bake at 300 degrees for 1.5 hours.  Turn temperature down and bake additional 30 minutes. 

Serve with real whipped cream (buy heavy cream and whip it until stiff.  Using honey, sweeten whipped cream to your taste by drizzling it over cream and blending it in with mixer.
