Pumpkin Hummus Dip
- 2cloves garlic
- 1can (15 oz) chickpeas, drained and rinsed
- 1can (15 oz) pumpkin puree
- 2tablespoons almond or peanut butter
- 1teaspoon ground cumin
- 1 lemon, juiced
- 1teaspoon olive oil
- dash cayenne pepper
- ice water
- Puree all ingredients in a food processor. Add ice water until desired consistency is achieved. Pour into shallow bowl and decorate with chopped olives.
Garnish: Sprinkle with pumpkin seeds, or for a fun Halloween presentation, create a jack-o’-lantern face using chopped black olives!
