Potato Waffle

4tablespoons canola oil
4cups cold leftover mashed potatoes
3tablespoons each chopped green onions and red bell peppers
1/2cup grated Cheddar or Parmesan cheese
1 egg, lightly beaten


  1. Heat waffle iron and coat with some of the oil. Combine potatoes and remaining ingredients; mix well. Shape potatoes into patties and coat with flour. Place patties onto a waffle iron and cook until golden brown. Re-oil waffle iron if needed for additional batches.
