Potato and Apple-Walnut Pancakes

1-- egg
2tablespoons flour
1teaspoon salt
1/4teaspoon pepper
1-- apple
1/4cup chopped walnuts
1pound potatoes (about 3)
2tablespoons oil
-- sour cream, optional


  1. Heat oven to 250F. 

  2. Beat together the egg, flour, salt and pepper. 

  3. Peel and chop the apple.  Peel the potatoes and grate them.  Stir the apple, walnuts and potatoes into the egg mixture. 

  4. Heat 1 tablespoon of the oil in a large frying pan over medium heat.  Pour in about ½ cup batter for each pancake and flatten.  Fry as many pancakes as you can at a time without crowding.  Cook them until golden, 3 to 4 minutes a side. 

  5. Keep the pancakes warm in the oven while cooking the remainder.  Add the remaining oil as needed.  Serve with sour cream if you like.
