Pomegrante Guacamole

2 ripe avocados, peeled and pitted
3 scallions, white and green parts thinly sliced
1tablespoon chopped cilantro
1tablespoon fresh-squeezed lemon juice
1/2teaspoon salt
pinch white pepper
1/3cup pomegranate seeds


  1. Mash avocados in a nonreactive bowl, leaving them a bit chunky. Mix in scallions, cilantro, lemon juice, salt and white pepper. Gently fold in pomegranate seeds. Transfer guacamole to a serving bowl. Makes 2 cups
