Pecan Crusted King Salmon on Bacon, Apple & Pumpkin Hash

This salmon recipe was created by Chef Will Leroux, Corporate Chef at the Wayfarer Restaurant & Lounge in Cannon Beach, Ore. According to the Chef, this is the perfect recipe to showcase the regional cuisine of the Pacific Northwest.


2cups Fingerling potatoes - poached, sliced and cooled
4 Six-oz. pieces of Northwest King Salmon
1cup Pecans - chopped slightly in a food processor
1/2cup Flour
3tablespoons Canola Oil
Salt and Pepper
For the Hash
1 Poblano pepper - diced (One per serving)
1/2 Red pepper - diced (One per serving)
1clove Garlic - minced
