Peanut Butter Pancakes

  • Yield: 10 servings


1cup pancake mix
2tablespoons sugar
1-- egg
1/3cup peanut butter
1-- (5-ounce) can evaporated milk
1/3cup water
1/4cup (1/2 stick) butter (no substitutes), softened
2tablespoons honey


  1. Combine the pancake mix and sugar in a large bowl.  Stir with a spoon.  Combine the egg and peanut butter in a small bowl.  Beat with a whisk.  Add the milk and water.  Stir the peanut butter mixture into the pancake mixture just until moistened.  Pour the batter by 1/4 cupfuls onto a lightly greased, medium-hot griddle.  Turn each pancake when bubbles form on the top.  Cook the pancake until the second side is golden brown.  Combine the butter and honey in a small bowl and stir well.  Serve over the pancakes.
