- 1bunch parsley, tough stems removed
- 1/2cup fresh mint leaves
- 1/2cup extra-virgin olive oil
- 1/4cup toasted almonds
- 1clove garlic
- 1tablespoon lemon juice
- 1/4teaspoon salt
Place parsley, mint, olive oil, almonds, garlic, lemon juice and salt in the bowl of a food processor. Process until smooth. Try on grilled eggplant, chicken and veggie kebabs, or basmati rice.
