Olive You Forever Chicken

2cups chunky salsa, mild or spicy
2cans black olives, drained
12-- boneless, skinless chicken thighs
3cups shredded Colby Jack cheese


1. Preheat oven to 350 degrees.  Stir salsa with black olives in a medium bowl.  Place chicken in a greased baking dish and cover with olive-salsa mixture.  Sprinkle with cheese and bake for 45 minutes.  Serves 6 (two thighs per person)

(I know this sounds just too easy, but it tastes too delicious!  It's a knock-out dish for quick fixing on weeknights, or for impressing company.)
