Oatmeal Rockies

1/2cup canola oil
1 1/3cups light brown sugar
1tablespoon vanilla extract
2large egg whites
1 1/2cups all-purpose flour
1teaspoon ground cinnamon
1/2teaspoon baking soda
2cups old-fashioned oatmeal
1/2cup golden raisins


  1. Preheat oven to 350F. Coat a baking sheet with nonstick cooking spray.
  2. In a large bowl, stir together oil and brown sugar until combined. Add vanilla extract and egg whites.
  3. In a small bowl, combine flour, cinnamon and baking soda. Stir flour mixture into sugar mixture. Add oatmeal and raisins.
  4. Drop by spoonfuls onto baking sheet and bake 8 to 10 minutes.
