Northern Exposure Chicken Burgers

1pound ground chicken breast
1/2cup cooked wild or brown rice
1/2teaspoon nutmeg
1/2teaspoon salt
1/4teaspoon pepper
4-- sandwich buns
4teaspoons margarine
-- Parsley sprigs
-- Apple slices dipped in lemon juice
Apple yogurt sauce
1/2cup plain yogurt
1/4cup chopped unpeeled apple
2tablespoons chopped toasted pecans
1tablespoon chopped parsley
1/2teaspoon apple pie seasoning



  1. In medium bowl, mix together chicken, cooked rice, nutmeg, salt and pepper. Divide into 4 patties. Place on broiler pan and broil, about 4 inches from heat, about 5 minutes per side. Spread margarine lightly on inside of buns and toast in oven. Place chicken on toasted buns and spoon on Apple Yogurt Sauce. Garnish with parsley sprigs and apple slices.
  2. Apple Yogurt Sauce: In small bowl, mix together 1/2 cup plain yogurt, 1/4 cup chopped unpeeled apple, 2 tablespoons chopped toasted pecans, 1 tablespoon chopped parsley and 1/2 teaspoon apple pie seasoning.
