Muffins Jambalaya

3tablespoons butter
1/2cup minced green onions
1/2cup minced bell pepper
1cup yellow cornmeal
1 1/4cups all-purpose flour
2teaspoons baking soda
1teaspoon salt
2-- eggs
2cups buttermilk
1cup finely chopped ham
1cup finely chopped sausage


  1. Melt butter in a skillet.  Add onions and bell pepper and saute until softened, but not browned.  In a large bowl, combine cornmeal and next 3 ingredients.  In a small bowl, beat together eggs and buttermilk.  Add egg mixture to dry ingredients all at once, stirring only until blended.  Gently fold in ham, sausage, and vegetable mixture.  Spoon into well-greased muffin tins, filling two-thirds full.  Bake at 400F for 30 minutes or until nicely browned.
