1whole leg of lamb timmed of fat
1head garlic
1pound sharp provolone cheese in a block
2large sweet onions
5pounds potatoes
1pound sweet peas
1bunch flat leaf parsely


With a paring knife made large holes (pockets) in the leg of lamb all over. Into each pocket but a bite size peice of provolone, a clove of garlic, and some parsely. Do this all over the meat. Put in a roasting pan and cover with foil.Place in a preheated 350 degree oven. Okk for 1 hour, Add potatoes cut into wedges along with onions cut into wegdes, cover cook 40 minutes. Remove cover, add peas cook 15 minutes, make sure meat is done and potatoe and onion are cooked. Let rest. slice lamb put remaining ingredients into a bowl with the drippings…..Yum
