Mediterranean Capellini

  • Yield: 4 to 6 servings


1 (12-ounce) package capellini pasta
2tablespoons olive oil
1tablespoon minced garlic
1 red onion, chopped
1 red bell pepper, seeded and minced
1 (14 1/2-ounce) can no-salt-added whole tomatoes, chopped, with their juice
1 (10-ounce) can diced tomatoes and green chilies
1teaspoon drained capers
2teaspoons dried basil
11teaspoons dried oregano
1/2teaspoon crushed red pepper flakes
1/4cup grated Parmesan cheese


  1. Cook capellini according to package directions, omitting any oil and salt. Drain, set aside, and keep warm.
  2. While pasta is cooking, in a large pan, heat oil and saute garlic, onion and red pepper over medium heat until tender, about 5 minutes. Add tomatoes, capers, basil, oregano and red pepper flakes. Simmer 20 minutes. Serve over pasta and toss with Parmesan cheese.
