Linguine With Claim Sauce Salad With Black Olives


8 oz linguine

1/4 c olive oil or salad oil

½ c chopped onions

3 garlic cloves, minced

¼ c torn basil

1 (10 oz) can clams

3 tbsp torn mint (or 1 tsp dried mint leaves)

1 ½ c chopped tomatoes

1 ½ c pitted ripe olives, sliced

3 T lemon juice

2 T chopped parsley

1 tsp salt


Prepare pasta as directed on package:  drain


Meanwhile, heat oil in large skillet.  Add onion and sauté until tender but not browned, about 3 minutes.  Add garlic, basil and salt,.  Saute 2 minutes longer.


Drain claims, reserving juice.  Add juice and mint to skillet and cook 3 minutes.  Stir in clams and tomatoes.  Cook 1 minute longer.


Toss with hot pasta.  Add olives, lemon juice and parsley and toss again to coat.  Make 4 servings.
