Lemon Sugar Cookies

Lemon Sugar Cookies:
4large eggs
1 1/2cups vegetable oil
4cups flour
4teaspoons baking powder
1 1/2cups sugar
4teaspoons (heaping) grated lemon peel
4teaspoons vanilla extract
2 1/2cups confectioners' sugar
1tablespoon melted margarine
2tablespoons lemon juice
1tablespoon water
1/2teaspoon vanilla extract


  1. For the cookies: Combine the eggs and oil in a mixer bowl; beat at medium speed until well blended.  Mix the flour, baking powder and sugar together.  Add the egg mixture; beat well; Stir in the lemon peel and vanilla.  Drop by heaping teaspoonfuls onto a nonstick cookie sheets.
  2. Bake at 350F for 10 to 12 minutes.  Cool on cookie sheet for several minutes; remove to a wire rack to cool completely. Spread grosting on cooled cookies.
  3. For the frosting: Combine the confectioners' sugar, margarine, lemon juice, water and vanilla in a mixer bowl; beat well.
