Spicy Chicken Cordon Bleu

4-- skinless, boneless chicken breasts
1/2medium size onion, chopped
large garlic clove, finely minced
medium size tomato finely chopped
-- Jalapeno pepper, de veined, de seeded, finely minced
1/2cup diced ham
1/2cup shredded jack cheese


Take chicken breasts and pound them flat. Season with the salt and pepper. Fry ham to a tender crisp. Add garlic, onion, jalapeno, and tomato, sautee along with ham. Remove from heat and let cool before adding cheese and bread crumbs. Divide into four equal portions and place onto tenderized chicken breasts. Roll the four breasts up and secure shut using either butchers string or toothpicks. Now, bread the outside of the chicken breasts and fry them them brown, finish them in oven at 350 degrees for 15-22 minutes depending on size of chicken breasts.
