Honey-Glazed Carrots with Raisins

16ounces baby carrots
1/4cup pineapple chunks, with juice
1/4cup brown sugar
1/4cup honey
1dash ground cinnamon
1/2 cup California raisins
1/4cup dried cranberries
1leaf crushed mint


  1. Preheat oven to 400F.
  2. Place carrots in  saucepan. Cover with water and bring to a boil. Cook 15 minutes. Drain.
  3. Place carrots in baking dish with a lid. Add brown sugar, honey, cinnamon, raisins, cranberries, pineapple and mint. Cover and bake  15 minutes.
