Herbed Leg of Lamb

  • Yield: 8 servings


1 garlic clove, crushed
1teaspoon salt
2tablespoons olive oil
1 (5 to 6-ounce) pound leg of lamb
1teaspoon dried thyme
1teaspoon dried margoram
1teaspoon dried rosemary
2tablespoons flour
1cup white wine
1cup water


  1. Mix the garlic, salt and olive oil in a small bowl.  Spread over the lamb.  Sprinkle with the thyme, marjoram, rosemary and flour.  Place on a rack in a shallow roasting pan and add the wine and water to the pan.  Roast at 325F for 2 1/2 hours, basting frequently with the pan juices.
