Herbal Chicken

  • Yield: 4 servings


4-- chicken breast halves
-- Lemon juice
-- Parsley
1/2cup oil
2tablespoons lemon juice
1tablespoon chopped parsley
1tablespoon chopped watercress
1tablespoon chopped green onion
1teaspoon savory
1teaspoon dill weed
1teaspoon tarragon
1teaspoon chervil
-- Artificial sugar to equal 1/4 teaspoon
1 1/2teaspoons salt
-- Freshly ground black pepper
2-- hard-boiled eggs, chopped


  1. Place each chicken breast on a layer of foil.  Moisten with lemon juice and a sprig of parsley.  Seal and bake at 350F for 20 minutes or until done. Cool.  Beat together oil and lemon juice.  Stir in all herbs and seasonings.  Fold in chopped eggs.  Pour the sauce over the cold chicken.
