Healthy Two Ingredient Cookies
- Yield: 12 pieces
- 1cup old fashioned oats
- 2 bananas
Note: You can add raisins, cinnamon, chocolate chips, chopped toasted nuts, dried cranberries or coconut to the simple two-ingredient base.
- Preheat oven to 350°F. In a food processor, pulse oats until coarsely ground. In a medium bowl, mash (to make 1 cup mashed) with a fork until smooth. Add the oats and your choice of raisins, cinnamon, chocolate chips, chopped toasted nuts, dried cranberries or coconut.
- Drop by heaping spoonful onto a parchment-lined baking sheet and press down slightly. Bake about 15 minutes, until lightly browned. Store in an airtight container in the refrigerator. Makes 12.
