Great Greek Chicken

  • Yield: 6 to 8 servings


2pounds boneless skinless chicken breasts, cut into strips
1 green bell pepper, seeded and chopped
1cup chopped green onions
1tablespoon dried basil
1/2teaspoon dried oregano
1/2teaspoon dried thyme
1 (28-ounce) can diced tomatoes with juice
1teaspoon light brown sugar
1/2cup crumbled feta cheese


  1. In a large skillet coated with nonstick cooking spray, saute the chicken and green pepper, over medium heat, about 5 to 7 minutes or until peppers are softened.  Stir in green onions, basil, oregano, thyme, tomatoes and sugar.  SImmer about 15 minutes until the chicken is tender and the sauce thickens slightly.
  2. Before serving, stir in the cheese and serve chicken and sauce over pasta.
