Fried Oyster Sandwiches

9 oysters (3 per sandwich)
1/4cup Panko bread crumbs
White bread
2 leaves of lettuce (chiffonade)
1 cucumber (chopped)
1 tomato (chopped)
Flour for dredging
Canola oil for frying
Cajun Cream Cheese
24ounces cream cheese
2cups sour cream
3tablespoons lemon juice
Salt to taste


  1. Batter each oyster with flour, egg wash and Panko breading. To fry, add about 1 inch of vegetable oil into a pot and heat until oil shimmers. Place oysters carefully in oil and allow to fry until they start turning brown. Transfer to a paper towel lined rack to drain and season with salt. Set aside.
  2. For the Cajun cream cheese, place all ingredients into a food processor and puree until smooth.
  3. Top white toast with fried oysters, Cajun cream cheese lettuce, cucumber, and tomatoes.
