French Onion Chicken and Potatoes

2medium russet or Yukon Gold potatoes or 4 to 5 red potatoes
2 6- to 8-ounce) chicken breasts 1 packet dry onion soup mix
1cup water
4slices Swiss cheese
1cup canned fried onions


  1. Cut potatoes in half lengthwise and then slice into thin 1/4-inch thick half moons.
  2. Using a separate clean cutting board, cut chicken into 1/2-inch strips.
  3. Combine onion soup mix, water and chicken in microwave safe dish.  Stir until combined.
  4. Top with single layer of potatoes, leaving center empty for venting.  Top with sliced Swiss cheese.
  5. Tightly cover with lid or plastic wrap and place in microwave.  Microwave on HIGH for 12 minutes* or until potatoes and chicken are done.  Let sit 2 minutes.  Use oven mitts to carefully remove from microwave.  Garnish with fried onions and serve. CAUTION:  Due to steam build-up, use oven mitts or tongs to remove plastic wrap from dish.
