Easy Ice Cream Sandwiches
- Ginger Snap Cookies
- Peanut Butter
- Chocolate Ice Cream
- Spread peanut butter on each cookie.
- Add a small scoop of ice cream to the peanut butter on half of the cookies.
- Place the remaining cookies on top of each scoop of ice cream to make sandwiches.
- Serve immediately or quickly store in the freezer. Allow 10 minutes to defrost if serving from the freezer.
