Easy Bacon Mushroom Frittata

1/2pound bacon, diced
1 onion
4medium shiitake mushrooms, chopped
12 eggs


  1. Heat broiler.
  2. Heat a cast-iron skillet over medium-high heat. Add bacon and cook until fat begins to render. Add onion and sauté until onions are soft and fragrant. Add mushrooms and sauté until soft.
  3. Beat eggs in a separate bowl and pour into skillet, mixing quickly with other ingredients. Place skillet in oven and broil until top is golden brown, about 10 minutes.
