Creamy White Bean Dip

  • Yield: 3 cups


2 (15-ounce) cans cannellini beans, drained and rinsed
Cloves from 1 head roasted garlic
6tablespoons extra-virgin olive oil
1/2teaspoon salt
1/2teaspoon freshly ground black pepper


  1. Combine beans and about two-thirds of the garlic cloves in a food processor and blend well. With processor on, stream in olive oil. Continue to blend until dip is creamy. Add salt and pepper and blend once more. Add remaining roasted garlic cloves on top for garnish.
