Corn Salad with French Dressing

You may replace the green pepper with broccoli or use carrots instead of the pimiento. You can even start out by purchasing the Mexican-style canned corn and mix with the cucumber, onions and dressing.


1can (29-oz) whole-kernel corn
1 4-oz jar pimiento
1small onion, minced
1medium green pepper, chopped
1small cucumber, chopped
1/2cup French dressing
Whole large lettuce leaves


  1. Drain corn and pimiento; mince pimiento and mix with corn, onion, green pepper, and cucumber. Combine with French dressing and mix well. Chill for several hours. Serve on a large lettuce leaf.
