Chocolate Brownies with Peppermint Cream Cheese Frosting

1/2cup (1 stick) margarine
2/3cup cocoa
1 1/2cups sugar
1large egg
2large egg whites
1 1/2cups all-purpose flour
1/4cup nonfat plan yogurt
1tablespoon vanilla extract
1/2teaspoon peppermint extract
Mint Frosting:
3tablespoons light cream cheese, softened
1tablespoon light stick margarine, softened
2cups confectioners' sugar
1/2teaspoon peppermint extract
Few drops of green food coloring


  1. Preheat oven to 350F.  Coat a 15x10x1-inch baking sheet with nonstick cooking spray.
  2. To prepare brownies:  In a small saucepan or in the microwave, melt margarine with cocoa over low heat. Transfer melted chocolate mixture to a mixing bowl. Add sugar, egg and egg whites, beating well. Add flour alternately with yogurt. Add vanilla and peppermint extracts.
  3. Pour into baking sheet and bake 15 minutes, or until a toothpick inserted in the middle comes out clean. Do not overbake.
  4. To prepare the frosting: In a mixing bowl, blend cream cheese and margarine until creamy. Gradually add confectioners’ sugar, mixing until smooth. Add peppermint extract and green food coloring.  Spread over top of cooled brownies and cut into squares.
