Chicken Oregano with Angel Hair

  • Yield: 4 to 6 servings


1 1/2pounds skinless, boneless chicken breasts
1 onion, chopped
1/2teaspoon minced garlic
Salt and pepper to taste
1tablespoon dried oregano
1 (16-ounce) can no-salt-added whole tomatoes, crushed with their juices
1/2pound mushrooms, sliced
1/4cup dry red wine (optional
1 (8-ounce) package angel hair (capellini) pasta
1tablespoon olive oil
1tablespoon chopped parsley


  1. In a large skillet coated with nonstick cooking spray, brown chicken on both sides over medium heat, 5 minutes in all, cooking in batches if necessary.  Add onion and garlic and cook 5 minutes more, or until vegetables are tender.  Sprinkle with salt and pepper and oregano.  Add tomatoes, mushrooms and wine, if desired.  Cover and cook over low heat about 20 minutes, until chicken is tender.
  2. Meanwhile, prepare pasta according to package directions, omitting any oil and salt.  Drain and mix with olive oil and parsley.  Serve chicken and sauce over pasta.
