Herbed Cheese Stuffed Mushrooms

2pounds white button mushrooms
2 (5.2 oz) packages soft herbed cheese (like Boursin)
1/4teaspoon salt
freshly ground black pepper
melted butter
fresh basil or other herbs


  1. Remove and chop stems from mushrooms. Cook stems in butter until browned, about 5 minutes. Remove from heat and mix in cheese, salt and pepper.
  2. Fill mushroom caps and place on a baking sheet. Drizzle butter over top and bake 20 minutes at 350°F.
  3. Sprinkle with chopped fresh basil or other herbs before serving.
