Caramel Meringue Bars

  • Yield: 40 to 60 pieces


3/4cup soft butter
1/2cup brown sugar, packed
1/2cup sugar
3-- eggs, separated
1teaspoon vanilla
2cups sifted flour
1teaspoon baking powder
1/4teaspoon salt
1/4teaspoon soda
1-- (6-ounce) package semi-sweet chocolate bits
1cup coconut, flaked
3/4cup chopped nuts
1cup brown sugar


  1. Preheat oven to 350F.
  2. Blend butter, 1/2 cup brown sugar, granulated sugar, egg yolks and vanilla.  Beat 2 minutes with electric mixer, scraping bowl constantly.  Sift flour, baking powder, salt and soda.  Stir into creamed mixture until thoroughly mixed.  Spread or pat dough into greased 9 1/2×13-inch pan.  Sprinkle with chocolate bits, coconut, and nuts.  Beat egg whites until frothy.  Add 1 cup brown sugar.  Beat until stiff but not dry.  Spread on top of chocolate mixture and bake for 35 to 40 minutes at 350F.  Cool.  Cut into bars.
