Cajun Turkey Meatloaf

1/4cup butter
1 large onion, chopped
1/2cup celery, chopped
1/2 green pepper, chopped
1/4cup green onion, chopped with tops
2 cloves garlic, minced
1tablespoon hot pepper sauce
2tablespoons Tony Chachere's seasoning (or other Cajun seasoning blend)
1tablespoon Worcestershire sauce
2pounds ground turkey
1cup quick oats, uncooked
1 to 2 eggs, beaten
1/4 to 1/2cup milk
1/2cup ketchup


  1. Preheat oven to 350F.  In a medium-size saucepan, melt butter and saute onion, celery, green pepper, green onion and garlic for 5 minutes.  Stir in hot pepper sauce, Cajun seasoning and Worcestershire sauce.  When completely heated, set aside to cool.  Place turkey in a large mixing bowl.  Add cooled seasoned vegetable mixture, oats, egg, 1/4 cup milk and ketchup.  Mix with your hands until well blended.  Add another egg and more milk if the mixture needs more moisture.  It should be firm enough to hold a loaf shape.  Shape into a large loaf and place in a 9-by-13 inch baking dish.  Bake until the center is well cooked, about 1 hour.

Tips from Our Test Kitchen: Serve this delicious meatloaf hot with your favorite side dishes or chilled and sliced in a meatloaf sandwich.  It’s great with tangy mustard on whole wheat bread.
