Brussels Sprouts Stir-Fry

1pound Brussels sprouts
3tablespoons olive oil, divided
1/2cup chopped onion
Salt and pepper to taste
Crushed red pepper flakes


  1. Slice brussel sprouts in half.
  2. Heat 1 tablespoon olive oil over medium heat, and sauté onion about 5 minutes or until tender. Remove from pan.
  3. Heat remaining 2 tablespoons olive oil in the same pan, place Brussels sprout halves face down in skillet and cook until golden brown. Return onions to skillet, cook an additional 10 minutes and make sure veggies are tender.
