Brandied Peaches

6-8pieces Fresh Peaches
1tablespoon good brandy for
2teaspoons brown sugar


Pit one peach for each muffin pan, being sure not to cut through the bottom of the peach. Put 1 tbsp. brandy to each, then 2 tsp. brown sugar to each.  Let stand at room temperature for 2 days.  Put whole pan in freezer and freeze.. When frozen, remove and store in plastic bag.  To serve, remove from freezer ahead of time to let them mostly thaw, but still cold.  Top with whipped cream or vanilla ice cream and serve..
